The tiny but mighty Crimson Gold crab apple combines high sugar and high acid to create the perfect balance. It is full bodied, with notes of baked apple and Bartlett pear lifted by bright acidity and a gentle brown sugar warmth. This cider drinks like a crisp autumn afternoon: golden, layered, and deeply refreshing.

About the Apple

On a remote hillside in Humboldt County, California, Albert Etter spent fifty years breeding fruit for one reason alone: flavor. Best known for his apples and strawberries, he was largely unrecognized in his lifetime. Horticulturalists now regard him as one of the most gifted plant breeders in American history.

Crimson Gold was his last apple, an answer to a problem most considered unsolvable. He wanted a crab apple sweet and tangy enough to eat straight from the tree, without the harsh astringency that puts most people off. After his death in 1950, the variety was nearly lost. A single surviving limb was found in the 1970s and carefully propagated back from the edge of extinction.

  • Heirloom Crimson Gold apple juice (not from concentrate)
  • Carbonated filtered water

No added sugar. No preservatives. No artificial flavors.

How to Serve

Serve chilled in a flute or champagne coupe. Each 750ml bottle serves three to four guests. If you are not finishing the bottle, fit an airtight stopper and return it to the refrigerator. Like all sparkling ciders, Piptree is best enjoyed within 24 hours of opening.

Natural sediment may occur. Swirl gently before serving.

Nutrition

Simplicity reveals flavor. Piptree is made with just two ingredients: fresh apple juice and carbonated water. A touch of filtered water creates a crisper, lighter cider with naturally fewer calories and less sugar. Piptree contains 45% less sugar than traditional sparkling cider.
