Mountain Rose Sparkling Apple Cider

Pale blush pink in the glass, a color drawn entirely from the apple itself. Freshly picked berries and delicate florals on the nose. Ripe thimbleberry, wild strawberry, and subtle citrus on the palate, with a bright, tingling finish. The rosé of apple cider.

Lucky Newell was riding across his ranch in Oregon in the 1950s when he found a wild apple tree bearing the most unusual apple he had ever seen. He brought it back for his wife, and when she bit into it, Lucky saw the flesh was the same deep pink as her lipstick. He never named it, and when he sold the land in the 1960s, the apple went with it. For nearly twenty years, the tree stood on the property, its pink blossoms opening each spring and its fruit going unpicked.

In the 1980s, a local grower came across the same tree and brought samples to Oregon State University. Researchers confirmed it as an entirely new variety. It was named Airlie Red Flesh. Over time, it gathered new names, among them Hidden Rose and Mountain Rose.

Serve chilled in a flute or champagne coupe. Each 750ml bottle serves three to four guests. If you are not finishing the bottle, fit an airtight stopper and return it to the refrigerator. Like all sparkling ciders, Piptree is best enjoyed within 24 hours of opening. Beautiful alongside a charcuterie board or on its own on a warm evening.

Natural sediment may occur. Swirl gently before serving.
