About the Apple
In 1811, a Scottish-Canadian farmer and fruit breeder named John McIntosh found a seedling growing wild on his Dundela farmstead in Upper Canada, now Ontario. He cultivated it patiently, and it bore fruit unlike anything in the region: vivid, intensely aromatic, sweet and sharp in a way that felt entirely its own. He gave away pips to neighbors, who grew nothing like the original. For decades, the McIntosh remained what it had always been: one remarkable tree, on one Canadian farm, enjoyed but impossible to duplicate.
It was his son Allan who finally unlocked it. Forty years on, Allan learned the craft of grafting, the art of taking a scion from one tree and marrying it to the rootstock of another. He applied it to his father’s apple, and it took. Every McIntosh in the world today is a direct descendant of that single tree in Dundela, grown through the same patient art, unchanged for more than two centuries.
Once Allan could propagate it freely, the McIntosh traveled, farm to farm, orchard to orchard, through Ontario and New England and the Great Lakes. Within a generation, it had become the defining apple of North America. It gave its name to a flavor. To say a new variety has “the Mac character” is still, in orchard circles, a form of high praise: that bright, vinous, intensely aromatic quality that no other apple has quite managed to replicate.

How to Serve
How to Serve
Serve chilled in a flute or champagne coupe. Each 750ml bottle serves three to four guests. If you are not finishing the bottle, fit an airtight stopper and return it to the refrigerator. Like all sparkling ciders, Piptree is best enjoyed within 24 hours of opening.
Natural sediment may occur. Swirl gently before serving.

Simplicity reveals flavor. Piptree is made with just two ingredients: fresh apple juice and carbonated water. A touch of filtered water creates a crisper, lighter cider with naturally fewer calories and less sugar. Piptree contains 45% less sugar than traditional sparkling cider.
